Belle & Herbs is an independent British fermentary based in Newcastle upon Tyne, specialising in raw, live kimchi, krauts and fermented pickles made using traditional wild fermentation.

We believe in doing things the slow way. Every batch is handmade and left to ferment naturally using time, salt and live cultures — no heat treatment, no shortcuts. The result is vibrant, complex flavour with the crisp texture and natural tang that only proper fermentation delivers.

Our range includes classic and vegan kimchi, colourful krauts, fermented pickles and kraut juice — all presented in retail-ready, recyclable pouch format to keep the food fresh, lively and convenient.
